Indian Recipe: Spicy Chicken Curry


Serves 5-6
Preparation time: 4-5 hours
Cooking time: 1 hour

Ingredients for Spicy Chicken Curry:

For the marinade:

  • 4 chicken (350g each), skineed
  • 4 tsp ginger paste
  • 4 tsp garlic paste
  • 1 tsp red chili powder
  • 1/3 tsp turmeric powder
  • Salt to taste

For the filling:

  • 200 gm chicken, minced
  • 2 tbsp onions, sautéed
  • 2 tsp ginger, finely chopped
  • ½ tsp peppercorns, crushed
  • A pinch of black cumin
  • 4 green cardamom
  • ½ tsp coriander powder
  • 1/3 tsp fennel powder
  • 10 almonds, chopped finely
  • 20 pistachios, chopped finely
  • 1 cashewnut, chopped finely

For the curry:

  • 1 ½ cup yogurt
  • 1 tsp red chili powder
  • Salt to taste
  • 5 tsp almond paste
  • 1/3 tsp mace )javitri) powder
  • 5 green cardamom
  • 4 tbsp butter

Directions for making Spicy Chicken Curry:

  1. Clean the chicken, marinate with ginger-garlic pastes, red chilli, turmeric and salt for 4 hours.
  2. For the filling, mic all the ingredients and divide into 4 parts. Stuff the stomach cavity of each chicken with one portion of filling.
  3. Skewer the chickens and roast in a tandoor or in a very hot oven for 8-10 minutes.
  4. Whisk together all the ingredients for the curry.
  5. Place the chicken in a handi (pot) or an oven-proof dish, along with the yogurt mixture and cook on low heat for 25 to 30 minutes. Serve hot, accompanied by an Indian bread.
