Ingredients for Coriander Flavored Pomfret:
- 4 pomfrets (300 to 350 gm each)
For the filling:
- 1 cup green coriander, chopped
- 4 green chillies, deseeded and chopped
- 2 tsp ginger, julienned
- 10 garlic cloves, crushed
- Salt to taste
- 2 tbsp lemon juice
- Oil for frying
For the curry:
- 2 ½ cups yogurt
- 4 tbsp coriander seeds, broiled, pounded
- Salt to taste
- 4 tsp ginger, chopped
- 225 grams coconut cream
- 4 tsp onion paste
- 5 green cardamom, crushed
- 2 bay leaves
- 1 tbsp peppercorn, freshly crushed
- 4 green chillies, slit
- 1 lemon
Directions for making Coriander Flavored Pomfret:

Clean pomfret and debone it keeping it whole. Give slight incisions on the outside.

For the filling, mix coriander, green chillies, ginger, garlic, salt and lemon juice together and smear inside and outside of pomfrets.

Heat oil in a pan, lightly fry pomfrets on both sides and place in shallow oven-proof dish.

For the curry, whisk together, the yogurt, coriander seeds, salt, ginger, coconut cream, onion paste, green cardamom, bay leaf, peppercorns, green chillies and juice of the lemon.

Pour this mixture over the fish, cover and bake for 15 minutes.

Serve hot, accompanied by steamed rice.
