Indian Recipe: Spicy Red Snapper


Serves 4
Preparation time: 1 ½ hour
Cooking time: 1 ½ hour

Ingredients for Spicy Red Snapper:

  • 2 red snapper (700 gm each)
For the marinade:
  • 1 tsp ginger paste
  • 2 tsp garlic paste
  • Salt to taste
  • ½ tsp turmeric powder
  • 1 ¼ cup yogurt, whisked
  • 2 tbsp lemon juice
  • 2 tsp coriander seeds roasted, crushed
  • ¾ cup oil
For the curry:
  • ¾ cup onions, chopped
  • 1 cup tomato, chopped
  • 1 tbsp coriander powder
  • 2 tsp red chili powder
  • 1 tbsp cashewnut powder
  • 1 tbsp garam masala
  • Salt to taste
  • 4 tsp green coriander, chopped

Directions for making Spicy Red Snapper:

  1. Clean the fish and make incisions on the fish.
  2. Mix together the ingredients for the marinade. Evenly coat the fish and keep aside for 1 hour.
  3. Heat oil in a kadhai (wok) and fry the fish evenly till golden brown on both sides. Remove and keep aside.
  4. In the same oil, sauté the onions till transparent. Add remaining ingredients (except green coriander) for the curry. Stir for a few minutes, sprinkling water occasionally.
  5. In a separate pan, place the fried fish and pour the curry on top. Cover and cook for 10 minutes.
  6. Stir in the excess marinade and cook for 5 minutes.
  7. Remove to an oven-proof dish, cover and cook for 40 minutes in a moderately hot oven.
  8. Serve immediately, accompanied by Naan.
