Ingredients for Indian Lamb Curry:
- 800 gms lamb leg, cut into pieces
- 2 tsp ginger paste
- 1 tbps garlic paste
- Salt to taste
- Salt to taste
- ½ cup oil
- 1 ¾ cup onions, sliced
- 6 cloves
- 6 cardamom
- 3 mace
- 1 cinnamon stick
- 4 tsp coriander powder
- 1 tbsp red chili powder
- 500 gm tomatoes, blanched, skinned, chopped
- 200 gm yogurt
- 2 tbsp Chironji paste
- 4 tsp almond paste
- 1 gm saffron
- 2 tsp green coriander
Directions for making Indian Lamb Curry:

Marinate lamb with ginger and garlic pastes and salt. Keep aside for 2 hours.

Heat oil in a heavy-bottomed pan, add onion, cloves, cardamom, mace and cinnamon. Stir fry till the onion becomes tender. Ad coriander powder and red chilli powder. Stir fry for a few minutes and remove from heat.

Transfer to an oven-proof fish and add the tomatoes, yogurt, chironji paste, almond paste and saffron.

Cover the dish with a layer of dough and cook in an oven for about 35 minutes.

Remove from oven and serve hot, garnished with chopped coriander and accompanied by Naan and Boondi raita
