Indian Recipe: Lamb with Onions


Serves 4
Preparation time: 15 minutes
Cooking time: 45 minutes

Ingredients for Lamb with Onions:

  • 1 kg lamb, cut into pieces
  • 1 1/3 tbsp butter
  • 1 ½ cup button onions
  • 1 ½ cup oil
  • 1 1/3 tsp turmeric powder
  • 3 bay leaves
  • 10 cloves
  • 5 cinnamon sticks
  • 8 red chillies, whole
  • 10 green cardamom
  • 1 cup onions, chopped/sliced
  • 4 tbsp ginger paste
  • 4 tbsp garlic paste
  • 1 ½ cups tomatoes, blanched deseeded, chopped
  • 2 ½ tsp garam masala
  • 2 tsp coriander powder
  • 1 1/3 tsp cumin powder
  • 2/3 tsp mace powder
  • A pinch of nutmeg powder
  • 2 tsp black pepper, crushed
  • Salt to taste
  • 1 tsp green coriander, chopped
  • 1 1/3 tsp ginger, julienned

Directions for making Lamb with Onions:

  1. Blanch the button onions and fry in hot butter for a few minutes.
  2. Heat oil in a pan, add turmeric alongwith bay leaves, cloves, cinnamon, whole red chillies, and cardamoms, sauté over medium heat for a few seconds until they begin to crackle.
  3. Add the onions and sauté until soft and golden in color. Stir in the ginger and garlic pastes and chopped tomatoes, cook for 5 minutes.
  4. Add the lamb pieces, cook for 10 to 15 minutes over medium heat until a pleasant aroma comes from the lamb. Reduce heat, simmer on low flame and cook until the lamb is tender.
  5. Sprinkle with garam masala, coriander powder, cumin powder, mace powder, nutmeg powder and black pepper powder. Season to taste. Add the button onions, stir, cover and cook for 2 to 3 minutes.
  6. Serve hot, garnished with green coriander and julienned ginger, accompanied by Naan.
