Indian Recipe: Lamb Shanks in Curry


Serves 4
Preparation time: 30 minutes
Cooking time: 2 hours

Ingredients for Lamb Shanks in Curry:

  • 8 lamb shanks
  • 4 tsp oil
  • 3 cloves
  • 5 green cardamom
  • 2 tbsp ginger paste
  • 2 tbsp garlic paste
  • Salt to taste
  • 3 tbsp yogurt
  • 2 tbsp brown onion, paste
  • 1 tsp red chilli powder
  • 3 cups stock
  • ½ cup tomato puree
  • 1 tbsp almond paste
  • ½ tsp garam masala
  • 1 tsp ginger, julienned
  • 1 tbsp saffron
  • A pinch of saffron
  • A few drops of sweet ittar
  • Dough to seal dish

Directions for making Lamb Shanks in Curry:

  1. Heat oil in a kadhai (wok) and sauté cloves and cardamoms till they crackle, add the ginger and garlic pastes and sauté till almost dry.
  2. Add lamb shanks, salt, yogurt, brown onion paste and red chilli powder. Stir for 3-5 minutes. Add stock and simmer till meat is tender.
  3. Remove shanks into an ovenproof casserole and strain the curry into another pan.
  4. Add the tomato puree to the strained curry and cook till the quantity reduces to two-thirds.
  5. Stir in the almond paste and the garam masala. Cook for 2 to 3 minutes. Pour over the shanks.
  6. Sprinkle julienned ginger, chopped coriander, saffron (crushed in a few drops of water) and sweet ittar. Seal the casserole with dough and let it simmer for 5 minutes in a preheated (175 degrees C) oven.
  7. Open the seal and wipe edges of dish. Transfer to a serving dish (can be served in the same dish)
  8. Garnish with chopped coriander and serve hot, accompanied by any Indian bread.
