Indian Recipe: Marinated Lamb, Slow Oven Style


Serves 4
Preparation time: 1 ½ hours
Cooking time: 1 ½ hours

Ingredients for Marinated Lamb, Slow Oven Style:

  • 1 kg lamb pieces
  • 2/3 cup yogurt
  • Salt to taste
  • 2/3 cups oil
  • 2 bay leaves
  • 3 black cardamoms
  • 8 green cardamoms
  • 1 cup onions, chopped
  • 3 tbsp ginger paste
  • 3 tbsp garlic paste
  • 5 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 2/3 cup tomatoes, chopped
  • 4 tsp ginger, shredded
  • 4 tsp ginger, shredded
  • 2 tsp cumin powder
  • 4 red chillies

Directions for making Marinated Lamb, Slow Oven Style:

  1. Whisk together the yoghurt and salt, marinate the lamb in it for an hour.
  2. Heat oil in a handi (pot), add bay leaves, both the cardamoms and sauté till they crackle.
  3. Add the onions and sauté till light brown. Add ginger and garlic pastes and stir for 4 to 5 minutes. Stir in coriander, turmeric and red chilli powder.
  4. Add the lamb along with the excess marinade, bring to a boil, reduce flame and simmer, adding water (3 tsp) at regular intervals. Cook until the lamb becomes tender.
  5. Add the tomatoes, chopped garlic, ginger and stir. Then add the cumin and whole red chillies. Cook on low flame till the lamb piece are tender and evenly coated with the marinade.
  6. Remove from heat and serve hot, accompanied by an Indian bread and Boondi Raita.
