INDIAN RECIPE: Cauliflower Pickle
|

Ingredients for Cauliflower Pickle:
- 1 large head cauliflower, cut in florets
- 50 gm shallots
- ¼ cup salt
- ¾ cup sugar
- 1 tsp turmeric powder
- 2 tsp mustard seeds, powdered
- 2 tsp red chilli powder
- 4 cloves
- 1 cup white vinegar
- 1 cup water
Directions for making Cauliflower Pickle:
- Mix onions, cauliflower and salt and let stand overnight.
- Drain and rinse in cold water.
- Combine sugar, turmeric, mustard seed, cloves and chillies in a har.
- Stir in the vinegar and water.
- Add the cauliflower and shallots. Stir well.
- Let stand for two days.
- Refrigerate to store.
