INDIAN RECIPE: Mint Coconut Chutney

Ingredients for Mint Coconut Chutney:
- 6 tbsp coconut, freshly grated
- 1 small piece of ginger, minced
- 1-2 green chillies
- Several sprigs of mint
- Juice of 2 lemons
- Salt to taste
Directions for making Mint Coconut Chutney:
- Wash and drain the fresh mint and remove leaves from stem. Discard stem.
- Put all the ingredients together in a blender and blend to a smooth paste.
- Adjust seasoning.
- Refrigerate to store.
