Indian Recipe: Lemon Rice


Ingredients for Lemon Rice:

  • 3 cups long grain rice
  • 4 ½ cups water
  • 2 tbsp oil
  • 1 tbsp yellow mustard seeds
  • 1 bay leaf
  • 2 cloves
  • 1 inch cinnamon stick
  • Pinch of turmeric powder rind of one lemon, grated
  • Salt to taste
  • Coconut, grated for garnishing
  • ¼ cup fresh coriander, chopped

Directions for making Lemon Rice:

  1. In a large pan heat oil and fry mustard seeds.
  2. When they pop, add turmeric and rice, then fry for 3 minutes until the rice is transparent.
  3. Add lemon rind, salt, water, cloves, cinnamon stick and bay leaf.
  4. Bring to boil for a minute, sir once and cook for 20 minutes of low heat.
  5. Fluff rice with fork and place in a warm oven until all water is evaporated and each rice grain is separated.
  6. Remove cinnamon stick and bay leaf.
  7. Turn onto a serving plate. Sprinkle grated coconut and fresh coriander.
