INDIAN RECIPE: Lemon Rice
|
|
Ingredients for Lemon Rice:
- 3 cups long grain rice
- 4 ½ cups water
- 2 tbsp oil
- 1 tbsp yellow mustard seeds
- 1 bay leaf
- 2 cloves
- 1 inch cinnamon stick
- Pinch of turmeric powder rind of one lemon, grated
- Salt to taste
- Coconut, grated for garnishing
- ¼ cup fresh coriander, chopped
Directions for making Lemon Rice:
- In a large pan heat oil and fry mustard seeds.
- When they pop, add turmeric and rice, then fry for 3 minutes until the rice is transparent.
- Add lemon rind, salt, water, cloves, cinnamon stick and bay leaf.
- Bring to boil for a minute, sir once and cook for 20 minutes of low heat.
- Fluff rice with fork and place in a warm oven until all water is evaporated and each rice grain is separated.
- Remove cinnamon stick and bay leaf.
- Turn onto a serving plate. Sprinkle grated coconut and fresh coriander.
