Ingredients for Moti Pilau:
- 500 g (1 lb) minced lamb or beef
- 1 medium onion, finely chopped
- 1 teaspoon cummin seeds
- 1/2 teaspoon crushed garlic
- 1/2 teaspoon finely grated fresh ginger
- 1 teaspoon salt
- 1/2 teaspoon garam masala
- 2 teaspoons chopped fresh coriander or mint
- 1/2 cup yoghurt
- 1 tablespoon ghee
Pilau:
- 1 1/2 cups long grain rice
- 1 tablespoon ghee
- 1 onion, finely sliced
- 3 whole cloves
- 3 cardamom pods, bruised
- 1 small stick cinnamon
- 1 teaspoon taaza masala optional
- 3 cups hot water
- 1 1/2 teaspoons salt
- 1/4 cup sultanas
- 1/2 cup green peas
Directions for making Moti Pilau:
- Put lamb or beef and onion into a large bowl.
- Roast cummin seeds in a dry pan over medium heat, stirring constantly until they darken, then crush.
- Mix cummin, garlic, ginger, salt, garam masala and herbs into the yoghurt, then combine with lamb and onions in bowl and mix well.
- With wet hands form into small balls, no larger than marbles.
- Heat ghee in a frying pan and brown the meatballs on all sides, shaking pan rather than stirring, and taking care not to break them. Set aside.
- For Pilau: Wash rice if necessary and drain for at least 30 minutes.
- In a large saucepan heat ghee and fry the onion, cloves, cardamom pods and cinnamon stick until onions are golden.
- Stir in the green masala paste, then immediately add the rice and fry for 3 minutes, using a metal spoon.
- Add hot water, salt, sultanas and peas.
- Stir in meatballs.
- Bring to boil, cover tightly, then turn heat very low and cook for 20-25 minutes or until all liquid is absorbed. Serve hot.
