Indian Recipe: Onion Rice


Ingredients for Onion Rice:

  • 3 cups basmati, Indian long grain rice
  • 2 tbsp ghee or clarified butter
  • 2 tbsp vegetable oil
  • 2 onions, finely sliced
  • 1 tsp lemon juice
  • 4 ½ cups water
  • Salt to taste
  • 1 bay leaf
  • 2 whole cloves
  • 1 stick of cinnamon
  • 1 tsp chili powder
  • ½ tsp coriander powder
  • Raisins for garnishing

Directions for making Onion Rice:

  1. Clean, wash and soak rice for half an hour.
  2. Heat oil in a large pan and fry onions until golden brown.
  3. Set aside half the fried onions in the pan, add rice and fry for 2 minutes, until rice gets the pale brown color of fried onions.
  4. Add water, butter, chili powder, coriander powder, lemon juice and salt.
  5. Bring to boil for a minute, then lower heat and cook for 20 minutes.
  6. Rice should now be three-quarters cooked.
  7. Add bay leaf, cinnamon and cloves.
  8. Fluff the rice with fork and place the rice in a warm oven until all moisture has evaporated and each grain of rice is separate.
  9. Remove bay leafs, cinnamon and cloves and stir in fried onion.
  10. Turn onto serving plate. Sprinkle with raisins on top.
