INDIAN RECIPE: Onion Rice
|
|
Ingredients for Onion Rice:
- 3 cups basmati, Indian long grain rice
- 2 tbsp ghee or clarified butter
- 2 tbsp vegetable oil
- 2 onions, finely sliced
- 1 tsp lemon juice
- 4 ½ cups water
- Salt to taste
- 1 bay leaf
- 2 whole cloves
- 1 stick of cinnamon
- 1 tsp chili powder
- ½ tsp coriander powder
- Raisins for garnishing
Directions for making Onion Rice:
- Clean, wash and soak rice for half an hour.
- Heat oil in a large pan and fry onions until golden brown.
- Set aside half the fried onions in the pan, add rice and fry for 2 minutes, until rice gets the pale brown color of fried onions.
- Add water, butter, chili powder, coriander powder, lemon juice and salt.
- Bring to boil for a minute, then lower heat and cook for 20 minutes.
- Rice should now be three-quarters cooked.
- Add bay leaf, cinnamon and cloves.
- Fluff the rice with fork and place the rice in a warm oven until all moisture has evaporated and each grain of rice is separate.
- Remove bay leafs, cinnamon and cloves and stir in fried onion.
- Turn onto serving plate. Sprinkle with raisins on top.
