Indian Recipe: Khandvi
|

Preparation time: 45 minutes
Cooking time: 7 to 10 minutes
Ingredients for Khandvi:
- 1 ¼ cup gram flour, sieved
- 2 ½ cups yogurt, whisked
- 2 lemons
- 1 tsp green chilli paste
- 1 ½ tsp ginger paste
- 1 tbsp salt
- A pinch of turmeric powder
- 2 ½ cups water
- 4 tsp oil
- 4 tsp mustard seeds
- 4 2/3 tbsp cucumber, chopped
- 2 2/3 tbsp capsicum, chopped
- 4 tsp green coriander, chopped
- ½ cup coconut, grated
Directions for making Khandvi:
- To the yogurt, add juice of 2 lemons, green chilli paste, ginger paste, salt, turmeric powder and gram flour, whisk well to break all lumps. Mix in water and whisk again.
- Cook the mixture till it is of quite thick consistency, stirring continuously to prevent it from sticking to the bottom.
- Oil a smooth surface, pour the mixture and spread evenly to a thickness of 1 mm. Leave it to cool.
- Heat oil, sauté mustard seeds till they crackle. Add cucumber, capsicum, coriander and coconut. Toss for a while till vegetables and coconut are cooked but still slightly crunchy. Sprinkle this over the cooked gramflour sheet.
- Cut the sheet into 1 1/2” strips. Roll each strip tightly, place on a platter and serve hot, garnished with chopped coriander and accompanied by Mint chutney
