INDIAN RECIPE: Indian Lentil Soup

Serves 4-6
Ingredients for Lentil Soup:
- 1 cup masoor (orange lentil)
- 2 onions, finely chopped
- 4 tomatoes, blanched, peel and pureed
- 7 shallots
- 5 tbsp ghee or clarified butter
- 2 cloves garlic, minced
- 5 red chillies, finely chopped
- ½ tsp cumin seeds
- 1 tsp coriander seeds
- ½ cup parsley
- Salt to taste
Directions for making Lentil Soup:
- Clean, wash and pressure cook masoor in 4 cups of salted water.
- Add shallots and simmer for 5 minutes.
- Heat ghee/butter in saucepan, fry onions for 3 minutes, then add ginger, garlic, cumin, chillies and coriander and fry for further 3 minutes.
- Transfer fried mixture to lentil mixture.
- Pour in tomato puree and simmer for 10 minutes.
- Serve in soup bowls garnished with parsley.
