Shahi paneer is a North Indian food consists mainly of paneer. Paneer is Indian cottage cheese made from whole milk, which is used in variety of Indian dishes like palak paneer, paneer tikka, paneer pasanda, malai kofta, shahi paneer, matar paneer etc..

Ingredients for Shahi Paneer:
- 1 kg cottage cheese (paneer), fingers
- 5 1/3 tbsp oil
- 6 cloves
- 2 bay leaves
- 3 cinnamon sticks
- 6 green cardamoms
- 1 cup onion paste
- 2 2/3 tbsp ginger paste
- 2 2/3 tbsp garlic paste
- 2 tsp red chilli powder
- ¾ tsp turmeric powder
- 1 tsp coriander powder
- 2 tsp cashewnut paste
- Salt to taste
- 1/3 tsp red coloring
- ¾ cup yogurt, whisked
- 2 tsp sugar
- 2/3 cup cream
- 1 2/3 tsp garam masala
- 2/3 tsp green cardamom powder
- 3 drops vevitier
- ½ gm saffron (dissolved in 1 tbsp milk)
Directions for making Shahi Paneer:
- Heat oil in a pan, add cloves, bay leaves, cinnamon sticks and green cardamoms, sauté over medium heat until they begin to crackle. Add the onion paste and stir fry for 2-3 minutes.
- Stir in the ginger and garlic pastes, red chilli powder, turmeric powder, coriander powder, cashewnut paste, salt and color.
- Add yogurt, warm water (1/2 cup) and sugar, bring to a slow boil and then simmer until the oil separates.
- Allow the curry to cool, remove whole spices and blend to a smooth consistency.
- Reheat the curry, stir in the cream, garam masala, cardamom powder, mace power, vevitier and saffron mixture.
- Add the cottage cheese, fingers, cook further for 5 minutes.
- Serve hot, garnished with chopped coriander, accompanied by any dry vegetable preparation and Paranthas.
