Ingredients for Spiced Cauliflower:
- 5 cauliflower, small, whole
- Oil for frying
- 1 cup onions, chopped
- ½ cup cashewnuts
- 6 green cardamoms
- 1 tsp turmeric powder
- 2 tsp red chilli powder
- 5 tsp ginger paste
- 5 tsp garlic paste
- 2 tsp garam masala
- 1 cup yogurt, whisked
- Salt to taste
- 2 tbsp butter
- 1 tbsp lemon juice
- 2/3 tsp mace powder
Directions for making Spiced Cauliflower:

Wash, clean and remove the stems of the cauliflower.

Heat oil in a kadhai or wok, deep fry each cauliflower over medium heat until almost cooked.

In the same oil, fry onions and cashewnuts (saving a few for garnishing), grind to a fine paste.

Heat oil (5 tbsp) in a pan, add cardamoms, saute for a few second. Add turmeric powder, red chili powder, ginger-garlic pastes and garam masala, cook for 30 seconds.

Add onions-cashewnut paste and whisked yogurt, cook for 10 minutes on low heat and season to taste with salt.

Arrange the fried cauliflower in a baking dish and pour the curry over each cauliflower. Bake in a moderate oven of 175 degrees C for 10 minutes.

Garnish with fried cashewnuts, dot with melted butter and sprinkle lemon juice and mace powder. Serve hot, accompanied by Khasta Roti.
